The Chocolat Bar in Boise has been a downtown staple for 20 years, so when it finally went for sale, one local family says it was an opportunity they couldn't pass up.

"We were fans, we had been customers of theirs for about 10 years prior to us owning it, purchasing it, and you know, we just absolutely loved it," said Chocolat Bar owner Jason Stack. "No matter where we went in the world and had chocolate, we always wanted to come back to The Chocolat Bar. It was just such a part of our life that when the opportunity came up, we just pounced."

Jason and Trish Stack say they have owned The Chocolate Bar for about five years. In that time, they've expanded and opened a second location in Eagle.

"We make handmade, handcrafted artisan chocolates," said Jason. "It's very subtle, nuanced flavors and they're just well balanced."

Jason says all the chocolate is fresh and made in-house, as opposed to other companies that make batches that last year-round.

"The biggest thing we don't do is we don't freeze our chocolate," said Jason. "Typically you can taste the difference in that."

If you visit The Chocolat Bar in Boise or Eagle, you can expect to have a range of options to choose from.

"The first thing that everybody always talks about is the smell, you know, when they walk in, you get the chocolate smell, everybody loves that," said Jason. "We have a wide variety of products, everybody's always amazed at how many products we actually make, we have roughly 130."

Jason says there's something for everyone at The Chocolat Bar.

"It's a happy business because people are always excited to come into a chocolate shop, and if they're not, usually we're gonna make them happy by the time they leave because we can find something that they like," said Jason.

The Chocolat Bar is a small, local family business that offers blends of milk, dark and white chocolate available for pickup or delivery.

"We do everything by weight downtown and so you can come in, you can buy one small piece, that's about $1.00, maybe, and then all the way up to a one-pound box for $32," said Jason. "From there, we can build even bigger gifts, different gift baskets and towers and whatnot."

Products at The Chocolat Bar are highly customizable.

"As people come in, they can choose whatever they want and they can build their gift boxes and they can create their own experience for their loved ones that they are buying those gifts for," said Jason. "I think that's a really important part, we have a lot of customers who come in knowing exactly what it is that their loved one wants."

The Chocolat Bar is located at805 W Bannock St, Boise and600 S Rivershore Ln STE 170, Eagle.
